The so called stone ollare (from the latin olla) is a stone, mainly
spread in Valtellina ( northern Italia). The particular structure of
this natural material, rich in microscopic ricco di microscopiche
crannies, permits a extraordinary capacity of keeping the heat. |

|
|
However, it takes much time to give heat ( our cook always has at least
5 in the oven at 300 degrees), once reached the necessary temperature,
reveals for these grilled chops made directly on the table. |
